Capitalizing on consumer desire for "cleaner" menu items, Brakebush Brothers Inc.’s sliced natural chicken breast and diced natural chicken breast varieties come from chickens fed an all-vegetarian diet and raised without antibiotics. The sliced breast strips are sized at 3/8 inches, while the diced chicken breast comes in 1/2-inch pieces. The products can be easily integrated into a foodservice operator's menu for use in salads, pastas, entrees, sandwiches or wraps, according to the company. By using callouts on menus that boast “raised without antibiotics” and “natural,” operators can lead consumers to clean-label choices, Brakebush noted.
