Henny Penny's Evolution Elite reduced oil capacity fryer line saves foodservice operators money by using 40 percent less oil to fry the same food capacity, by simplifying the filtering process and by extending oil life, the company stated. The key element of the fryers is frequent filtering, which it incorporated into daily operations, according to the company. The Evolution Elite incorporates three separate technologies into an integrated fryer/filtration system -- SmartFilter Express, which filters a vat in less than four minutes; Oil Guardian, which is an automatic top-off system that ensures a consistent oil level; and SmartFilter pads to trap and extract particulate and soluble impurities. The electric fryers are available in two, three and four well models with either full- or split-vat setups, the company stated. The new fryer will be presented at the 2009 NAFEM Conference in Orlando, in early February.
